Lunch: Classic Oven Fries

Serve this popular choice with your favorite beef or steak dish.

Ingredients

2 tbsp. olive oil
3 medium baking potatoes
3/4 tsp. salt
1/4 tsp. coarsely ground pepper

Instructions

Preheat oven to 425 degrees F. Brush 2 large cookie sheets with 1 tablespoon oil.
Cut each unpeeled potato lengthwise into quarters, then cut each quarter lengthwise into 2 wedges (or, cut potatoes crosswise into 1/4-inch-thick slices).
In large bowl, toss potatoes with salt, pepper, and remaining 1 tablespoon oil until evenly coated.
Divide potatoes between cookie sheets, spreading each batch into an even layer. Place cookie sheets on 2 oven racks and oven-fry potatoes 25 minutes or until tender and crisp, turning potatoes over once and switching pans between upper and lower racks halfway through cooking.
Lemony Oven Fries: Prepare Classic Oven Fries as above in steps 1 and 2. In step 3, mix 1 teaspoon grated fresh lemon peel, 2 tablespoons fresh lemon juice, 1 tablespoon dried oregano, and 1 large garlic clove, crushed with press, with salt, pepper, and oil in bowl. Add potatoes and toss to coat. Complete recipe as in step 4.
Spicy Oven Fries: Prepare Classic Oven Fries as above in steps 1 and 2. In step 3, mix 1 teaspoon onion powder, 1/2 teaspoon turmeric, and 1/4 teaspoon ground red pepper (cayenne) with salt, pepper, and oil in bowl. Add potatoes and toss to coat. Complete recipe as in step 4.
