Lunch: Trader Joe's Breaded Fish Tacos with Salsa Verde

Recipe by Lindsay Funston Frozen fish can be a weeknight savior—and winner, when you turn it into tacos.

Ingredients

1 lb. Trader Joe's Frozen Cod
1/4 head cabbage, thinly sliced
Juice of 1 lime
kosher salt
8 small corn tortillas
1/2 c. cherry tomatoes, halved
1/4 c. Trader Joe's Salsa Verde
Fresh cilantro, for serving

Instructions

Prepare Trader Joe's Frozen Cod fillets according to package directions. Let cool slightly, then flake into pieces.
Meanwhile, make tacos: In a large bowl, toss cabbage with lime juice and season with salt.
Over the flame of a gas burner, carefully toast tortillas one by one, flipping with tongs, 15 seconds per side.
Assemble tacos: Top charred tortillas with cabbage, fish, tomatoes, Trader Joe's Salsa Verde, and cilantro.
