Dessert: Strawberry Swirl Cupcakes

Starting with a boxed cake mix makes these jam-filled treats super simple, but feel free to use your favorite recipe for yellow cake.

Ingredients

1 box yellow cake mix
1 1/4 c. strawberry or raspberry jam
3 c. confectioners’ sugar
2 stick butter
1/4 c. whole milk
1/2 tsp. vanilla extract
1 pinch salt
sliced strawberries

Instructions

Prepare cake mix for cupcakes as label directs.
With mixer on medium speed, beat sugar, butter, milk, vanilla, and salt until smooth and well combined.
Fill piping bag with 3/4 cup jam; snip tip off of bag. To fill cupcakes, insert tip of piping bag into top of cooled cupcake. Squeeze about 2 teaspoons jam into center. Repeat with remaining cupcakes.
Without cleaning piping bag, cut tip to fit large round piping tip. Add buttercream and remaining 1/2 cup jam, alternating. Pipe onto cupcakes in swirl pattern. Garnish with strawberries, if desired.
