Dinner: Penne Pasta with Beans and Greens

Ingredients
1/4 cup parmesan cheese
1/2 tsp leaves dried oregano
1/4 tsp pepper
1/4 tsp salt
2 tsps olive oil
15 3/4 oz chicken broth
1/2 cup chopped carrots
1 clove garlic, minced
1/2 cup chopped onions
1 package spinach, thawed
14 1/2 oz italian style diced tomatoes
16 oz white beans
4 oz penne pasta
Instructions
1. Heat oil in saucepan, add carrots, onion and garlic, cook 5 minutes.
2. Add oregano, salt, pepper, broth and tomatoes; bring to a boil.
3. Cover, reduce heat and simmer 10 minutes.
4. Increase heat to medium-high; add pasta, beans and spinach; cook 14 minutes, or until pasta is done, stirring occasionally.
5. Sprinkle each serving with parmesan cheese.
