Health and fertility benefits of Lemon Broccoli Salad

Broccoli is one of the non-starchy vegetables that has a very low glycemic index (GI), which is beneficial for reducing blood sugar levels. Broccoli is also a source of DIM (Diindolymethane). Diindolymethane is very effective in reducing the testosterone levels in the body, an action that would automatically curb male dominant features and regulate the estrogen levels in the system. Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to. Researchers believe that cranberries contain substances that prevent infection-causing bacteria from sticking to the urinary tract walls. However, store-bought cranberry juice is typically all sugar - so make sure to stick with straight cranberries.

Ingredients

2 tbsp plain green yogurt
3 tbsps almond slivers
1/4 cup dried cranberries
1/3 cup chopped red onion
3 tbsps light mayonnaise or salad dressing
1/4 lemon yields lemon juice
1/4 tsp shredded lemon peel
4 cups chopped broccoli
1/4 tsp fresh grated ginger

2. Add broccoli, red onion and cranberries. Toss to coat.

3. Cover and chill for 1 to 24 hours. Just before serving, sprinkle with almond slivers.
