Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

2 tbsps margarine
1/4 cup applesauce
1/2 cup raisins
1 cup whole wheat flour
2 large egg whites
1 tsp cinnamon
1/2 tsp salt
1 1/2 tsps vanilla
1 tsp baking powder
1/2 tsp baking soda
1 cup brown sugar
1 1/3 cups oats

Instructions

1. Heat oven to 375 °F (190 °C).

2. Combine the flour, cinnamon, baking powder, baking soda, and salt in one bowl.

3. Mix the brown sugar, applesauce, eggs, margarine, and vanilla in another bowl.

4. Mix the two bowls into one bowl.

5. Then add in the oats and raisins.

6. Drop rounded teaspoons of the dough onto a baking sheet.

7. Cook for 10-12 minutes or until golden brown.

I thought having PCOS means eating boring food. I am so happy i made this cookies. They are so delicious and healthy. I used steel cut oats. Instead of margarine , i used coconut oil. Instead of brown sugar, i used maple syrup . I added toasted sesame seeds and flax seeds in it. Best cookies ever
