Ingredients
1 dash pepper
1/2 tsp salt
12 oz chicken breast meat, julienned
6 cups chicken broth, low sodium
3 oz mushrooms, dried and chopped
1 cup chopped spring onions
6 cups fresh spinach, trimmed and sliced
1 medium whole tomato, halved, seeded and diced
1 cup water
4 oz dry bow tie pasta
Instructions
1. Combine broth, water and scallions to boil in a pot.
2. Add the pasta and bring mixture to a full boil.
3. Reduce heat to low, cover and simmer for 5 minutes.
4. Add spinach and mushrooms, mix well, bring back to strong boil and cook for 1 minute.
5. Add chicken meat, separating pieces; salt and pepper. Mix well and return to a boil.
6. Cover and set aside off the heat for 5 minutes.
7. Add tomatoes, stir and serve immediately.
