Lunch: Apricot-Glazed Drumsticks with Broccoli

Broccoli is one of the non-starchy vegetables that has a very low glycemic index (GI), which is beneficial for reducing blood sugar levels. Broccoli is also a source of DIM (Diindolymethane). Diindolymethane is very effective in reducing the testosterone levels in the body, an action that would automatically curb male dominant features and regulate the estrogen levels in the system. Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to.

Ingredients

10 –12 chicken drumsticks, rinsed and patted dry
extra-virgin olive oil
kosher salt
Freshly ground black pepper
1/2 c. apricot jam
1 lemon
1 lb. broccoli, cut into florets
1/2 c. Chopped cilantro

Instructions

Preheat the oven to 450 degrees F. Line rimmed half-sheet pan with parchment paper.
Place chicken on sheet pan. Drizzle with olive oil and massage well; season with salt and pepper on all sides. Spread in an even layer and roast until internal temperature is 165 degrees F, 25 minutes.
Meanwhile, prepare glaze. In a small mixing bowl add jam, zest of half of lemon and 1 tablespoon juice. Remove chicken from oven and brush glaze all over. Heat broiler, then broil chicken for 3 to 5 minutes. Watch carefully as the glaze can burn.
Bring a large pot of water to boil and season with salt. Add broccoli and cook for 3 to 4 minutes; drain. Serve chicken with broccoli and garnish with cilantro.
