Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients
4 cups water
3 cups fresh lemon juice (about 13 lemons)
1 3/4 to 2 cups sugar
1/4 cup honey
Cinnamon sticks
Instructions
Combine first 4 ingredients in a 3- or 3 1/2-quart slow cooker.
Cover and cook on LOW 3 hours or until thoroughly heated. Whisk well before serving. Serve warm with cinnamon sticks.
Lemon Squeeze: We prefer the taste of fresh lemons, but if you don't want to do all that squeezing, substitute lemon juice from concentrate.
