Ingredients
1 cup mayonnaise
1 stalk celery, finely chopped
2 tablespoons red onion, finely chopped
1/2 lemon, juiced
2 teaspoons curry powder
1 (3 lb) roasted chicken, skin removed, meat picked
2 cups seedless red grapes, halved
1/2 cup roasted and salted almonds, chopped
kosher salt, to taste
black pepper, to taste
whole wheat bread, for sandwiches, optional
lettuce, for sandwiches, optional
tomato, sliced, for sandwiches, optional
Instructions
In a large bowl, combine the mayonnaise, lemon juice, curry powder, salt and pepper. Gently fold in the chicken, grapes, celery, onion and almonds.
Taste for seasoning and adjust accordingly. Serve on whole wheat bread with lettuce and tomato.
