Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. Ingredients

4 cups skim milk
2 (3.4 ounce) packages instant vanilla pudding
4 cups cooked long-grain white rice, cooled
1 (20 ounce) can DOLE® Pineapple Chunks, drained
1/2 cup DOLE Seedless Raisins
1 teaspoon ground cinnamon
1 teaspoon vanilla extract

Instructions

Whisk together milk and pudding mix in large bowl, 2 to 3 minutes.
Stir in rice, pineapple chunks, raisins, cinnamon and vanilla. Chill.
