Nuts are a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity. Walnuts are low on the glycemic index. What’s more, they also lower the glycemic index of other foods that you eat in conjunction with these nuts. Any kind of nuts provide a healthy source of fat and a great way to encourage PCOS weight loss.

Ingredients

1 cup butter, at room temperature
2 cups brown sugar, packed
2 tablespoons vanilla extract
2 eggs
2 cups self-rising flour
2 cups walnuts or pecans, chopped

Instructions

Pre-heat the oven to 375 °F.
In a bowl, cream the butter and sugar, then beat in the vanilla. Add the eggs one at a time, beating well. Add the flour 1/2 cup at a time, continuing to beat. Stir in the nuts.
Drop the dough by heaping tablespoon onto ungreased cookie sheets. Bake for 10 to 12 minutes, until golden brown.
Variation: For variety, you may want to add chocolate chips or coconut flakes. Sometimes I add both, depending on my mood.
