Ingredients

2 tablespoons extra-virgin olive oil
4 teaspoons cider vinegar
1/2 teaspoon honey
1/8 teaspoon kosher salt
1/8 teaspoon black pepper
1/4 cup thinly vertically sliced red onion
1/4 cup chopped roasted, unsalted pistachios
1 (5-oz.) pkg. baby spinach
1 ounce pecorino Romano cheese, shaved (about 1/4 cup)

Instructions

Combine first 5 ingredients in a small bowl, stirring with a whisk.
Combine onion, nuts, and spinach in a bowl. Add oil mixture; toss to coat. Sprinkle with cheese.
