Lunch: Bacon Tartines with Ricotta, Honey and Arugula

Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to. One tbsp of honey has a glycemic index (GI) of 55.

Ingredients

8 strips bacon, cut into 1/4" pieces
2 tbsp. butter
2 French baguettes, cut into 6" pieces, sliced lengthwise
2 c. ricotta
2 c. arugula, washed and dried
honey
Flaky sea salt, such as Maldon
Freshly ground black pepper
1 lemon, cut into wedges

Instructions

In a large skillet over medium-high heat cook bacon until browned and crisp. Transfer to paper towel–lined plate.
Transfer all but 1 tablespoon bacon fat into a small cup and reserve. Melt 1 tablespoon butter in skillet and toast baguettes, cut side down, until golden brown. Add additional butter as needed.
Remove toast from skillet and spread each piece with ricotta. Top with small handful of arugula and pieces of bacon. Drizzle with honey, sprinkle of sea salt and black pepper. Serve with wedges of lemon.
