Lunch: Bacon-Wrapped Baked Apples

Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to. Apples will improve your body's sensitivity to insulin (Reference: http://care.diabetesjournals.org/content/27/1/281.full)

Ingredients

1 package thick-cut bacon
3 Granny Smith apples
1/4 c. lemon juice
1/4 c. brown sugar

Instructions

Preheat the oven to 425 ° F.
Cut the bacon in half, so each strip is half as long. Set aside.
Cut apples into wedges (about 8 per apple). Dip in lemon juice to keep them from browning.
Wrap each apple slice with a piece of bacon and place it on a parchment-lined baking sheet with the edge—or seam—of the bacon facing down. That way the bacon won't unfurl as it cooks.
Sprinkle with brown sugar and bake for 15-18 minutes, or until the bacon is no longer translucent. Flip the apples halfway through cooking so the bacon cooks evenly. Serve warm.
