2 oz basil pesto
1 tsp garlic
1/4 cup cilantro
1 tbsp olive oil
4 medium slices chicken breast
1/2 cup chopped or sliced tomatoes
1 cup shredded part skim mozzarella cheese
1 cup spinach
1 medium red pepper
Instructions
1. Boil chicken and shred or place olive oil in a pan, dice the chicken and cook until no pink is left
2. Add red pepper and garlic to the pan and cook for 3 to 5 minutes than add all other ingredients (except the cheese).
3. Cook through until all hot and place either in or on bread, pasta or salad.
