Broccoli is one of the non-starchy vegetables that has a very low glycemic index (GI), which is beneficial for reducing blood sugar levels. Broccoli is also a source of DIM (Diindolymethane). Diindolymethane is very effective in reducing the testosterone levels in the body, an action that would automatically curb male dominant features and regulate the estrogen levels in the system. Ingredients
12 oz. broccoli, chopped
3 tbsp. water
2 scallions, white parts finely chopped, dark green parts, thinly sliced
2 cloves garlic, finely chopped
1 1-in. piece ginger, peeled and finely chopped
2 tbsp. oil
4 c. leftover rice
3 large eggs
1 c. frozen shelled Edamame, thawed
1 c. frozen peas, thawed
3 tbsp. low-sodium soy sauce
1 tbsp. honey
1 tbsp. rice vinegar
Instructions
In a large nonstick skillet, cook the broccoli in 3 Tbsp water, covered, for 2 minutes.
Add the chopped scallion whites garlic and ginger and stir-fry for 1 minute. Add 1 tablespoon oil, then the rice and cook, tossing until the rice starts to crisp.
Push the rice to one side of skillet, add the remaining tablespoon oil to empty side and scramble 3 eggs. Fold into rice along with the edamame, peas, soy sauce, honey and vinegar. Top with sliced scallions.
