Appetizer: Cinnamon Raisin Roll-Ups

A recipe I found in a kids cook book and made for my daughter, and ended up liking it for lunch.

Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. (Reference: http://www.ncbi.nlm.nih.gov/pubmed/11506060). One tbsp of honey has a glycemic index (GI) of 55.

Ingredients

1 tsp cinnamon, ground
1/2 cup slices apple (8 thin wedges)
1/4 cup golden raisins
1/2 cup grated carrot
4 flour tortillas
1 tbsp honey
4 oz low fat cream cheese, softened

Instructions

1. Combine cream cheese, carrot, raisins, honey and cinnamon in small bowl; mix well.

2. Spread tortillas evenly with cream cheese mixture, leaving 1/2" border around edge of each tortilla.

3. Place 2 apple wedges down center of each tortilla; roll up.

4. Wrap in plastic wrap. Refrigerate until ready to serve.
