Ingredients
2 large eggs
1 1/4 tbsps butter
1/2 tsp salt
1 tsp vanilla extract
3 small bananas
1/2 cup packed raisins
1/2 cup pieces or chips walnuts
2 1/2 tsps baking powder
1/2 tsp baking soda
1/2 cup sugar
1 1/2 cups flour
Instructions
1. Pour hot tea over raisins and allow to soak while you prepare the rest of the ingredients.
2. Pre-heat oven to 340 °F (170 °C).
3. Sift flour, baking powder, baking soda and salt into a bowl. Melt the butter and combine it with the sugar in another bowl, then add the eggs one at a time.
4. Mash the bananas and add these to the wet ingredients too.
5. Stir in the walnuts, drained raisins and vanilla extract.
6. Finally stir in the flour mixture a third at a time.
7. Scrape into a loaf tin (buttered and floured) and bake for 1 hour until a skewer comes out clean.
