Health and fertility benefits of Joy's Healthier Mac 'n' Cheese

Broccoli is one of the non-starchy vegetables that has a very low glycemic index (GI), which is beneficial for reducing blood sugar levels. Broccoli is also a source of DIM (Diindolymethane). Diindolymethane is very effective in reducing the testosterone levels in the body, an action that would automatically curb male dominant features and regulate the estrogen levels in the system.

Ingredients

8 oz. whole-grain elbow macaroni
2 tbsp. whipped butter
2 tbsp. all-purpose flour
1 1/2 c. 2-percent milk
8 oz. 2-percent sharp Cheddar cheese
1/2 tsp. smoked paprika
1 package frozen chopped broccoli
2 tbsp. grated Parmesan

Instructions

Cook pasta according to package instructions.
Melt whipped butter in sauce pan over medium heat. Add flour and cook, stirring, for 2 minutes; whisk in milk. Simmer, stirring occasionally, until slightly thickened, 5 minutes. Stir in Cheddar and paprika.
Toss with pasta and broccoli. Transfer mixture to baking dish, sprinkle with Parmesan, and broil until golden brown, about 5 minutes.
