Ingredients

1 oz goat cheese
2 breasts, bone and skin removed chicken breast
1/2 cup artichoke hearts

Instructions

1. Pre-heat oven to 375 °F (190 °C).

2. Flatten chicken breast to 1/8".

3. In food processor, combine artichoke hearts and goat cheese. Combine until creamy.

4. Split between two breasts. Spoon onto each breast in the middle, folding breast over mixture.

5. Bake for 15 to 20 minutes depending on size of breast.
