Lunch: Southern "Fried" Chicken Salad
Ingredients
1/3 c. light buttermilk
1/4 c. light mayonnaise
1 tbsp. cider vinegar
1 tsp. Dijon mustard
Instructions
Dressing: Blend ingredients.
Salad: Heat oven to 450 ºF. Line a rimmed baking sheet with foil. Coat foil with nonstick spray.
Mix cornmeal and paprika on sheet of wax paper. Coat chicken with cornmeal, place on prepared pan and coat with nonstick spray.
Bake 10 minutes or until cooked.
Toss Salad ingredients in large bowl; top each serving with 2 Tbsp dressing.
