Health and fertility benefits of Feta and Spinach Dip
Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to. Fresh spinach is an excellent source of vitamin K, vitamin A, vitamin C, and vitamin B6, all of which have significant roles in reducing inflammation in the body, all of which help in the case of infertility.
Ingredients
2 oz spinach, chopped
1/2 cup light cream cheese
4 oz fat free sour cream
1/4 cup crumbled feta cheese
3 tbsps chopped chives, minced
2/3 tbsp fresh lemon juice
1/4 tsp pepper
1/4 tsp salt
Instructions
1. Place spinach in a small saucepan with 2 cups of water.
2. Bring to a boil over high heat and then cook for 1 minute - drain well.
3. Place spinach, cream cheese, sour cream, feta cheese, 2 tablespoons of chives, lemon juice and pepper in a blender; puree.
4. Taste dip and add salt if desired.
5. Spoon dip into a serving bowl and sprinkle with remaining tablespoon of chives.
