2 ounces baby spinach
2 tablespoons chopped fresh basil leaves
2 teaspoons extra virgin olive oil
¼ cup shredded mozzarella cheese
Instructions
Combine the tomatoes, beans, broth, and sugar in a large saucepan. Bring to a boil over high heat, reduce heat, cover, and simmer 5 minutes.
Add the chicken, spinach, and basil, and cook 2 minutes or until spinach is wilted. Remove from heat, and stir in the oil.
