Health and fertility benefits of Rocky Road Brownies

Nuts are a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity. Walnuts are low on the glycemic index. What’s more, they also lower the glycemic index of other foods that you eat in conjunction with these nuts. Any kind of nuts provide a healthy source of fat and a great way to encourage PCOS weight loss.

Ingredients

Basic Brownie Batter
1 c. chopped walnuts
1 c. mini marshmallows
1/2 c. dark chocolate chips

Instructions

Preheat oven to 350 degrees F. Line an 8-inch square baking pan with parchment and set aside. Stir 3/4 cup walnuts into Basic Brownie Batter. Pour into prepared pan.
Bake until a skewer inserted into the center comes out with a few moist crumbs, 45 to 50 minutes. Top with marshmallows and let cool. Remove brownies from pan. Top with remaining 1/4 cup walnuts and drizzle with melted chocolate. Let cool on a wire rack. Using a sharp knife, cut into 12 squares. Nutritional information is based on a 1 brownie.
