Dinner: Baked Bean Casserole

The campfire classic is gussied up with brown sugar, onions and tomatoes and baked as a casserole.

Ingredients

2 tablespoons vegetable oil
1 onion, diced
1 (2 lb) can Boston-style baked beans
1 tablespoon mustard
1 (14 1/2 oz) can diced tomatoes
2 teaspoons brown sugar
1 teaspoon salt
1/2 teaspoon black pepper

Instructions

Preheat oven to 350 °.
In a large skillet over medium high heat, add the vegetable oil and onions and let the onions sweat down for 1-2 minutes. Add the can of tomatoes, and sauté for another minute. Add the beans, brown sugar and mustard and mix to combine.
Pour the bean mixture into a 2-quart casserole dish. Bake covered for 15-20 minutes, then uncover the casserole and bake for 15-20 minutes longer.
