Lunch: Spinach and Mandarin Orange Salad

By using prewashed spinach and canned Mandarin orange segments, we've created a fantastic five-minute salad.

Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to. Fresh spinach is an excellent source of vitamin K, vitamin A, vitamin C, and vitamin B6, all of which have significant roles in reducing inflammation in the body, all of which help in the case of infertility. One tbsp of honey has a glycemic index (GI) of 55.

Ingredients

2 bag baby spinach
1/3 c. bottled poppy seed salad dressing
1/2 lemon
1 can Mandarin orange sections
1/2 c. honey-roasted sliced almonds

Instructions

Place spinach in large salad bowl. Drizzle dressing on top; squeeze juice from lemon half over salad. Just before serving, toss to combine and top with orange sections and almonds.
