5 pounds mixed apples, such as Granny Smith, Gala and McIntosh (about 12 apples)
1 cup granulated sugar
3 tablespoons lemon juice
1/4 teaspoon kosher salt
1 stick (8 tablespoons) unsalted butter
3 tablespoons all-purpose flour
1 teaspoon ground cinnamon
