Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

4 large eggs
1 cup 2% milk
1 tablespoon honey
1/2 teaspoon ground cinnamon
1/8 teaspoon pepper
12 slices whole wheat bread
Cinnamon sugar, optional
Vanilla frosting, optional

Instructions

In a shallow bowl, whisk eggs, milk, honey, cinnamon and pepper. Dip both sides of bread in egg mixture. Cook on a greased hot griddle 3-4 minutes on each side or until golden brown.
Cut into decorative shapes. If desired, sprinkle with cinnamon sugar or frost with vanilla icing. Freeze option: Cool French toast on wire racks. Freeze between layers of waxed paper in a resealable plastic freezer bag. To use, reheat French toast in a toaster oven on medium setting. Or, microwave each French toast on high for 30-60 seconds or until heated through.
