Health and fertility benefits of Bobby's Honey Roasted Sweet Potatoes

Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. (Reference: http://www.ncbi.nlm.nih.gov/pubmed/11506060). One tbsp of honey has a glycemic index (GI) of 55.

Ingredients

2 medium sweet potatoes, cut into 1/2-inch wedges lengthwise
1 tablespoon olive oil
1 teaspoon cayenne
1 teaspoon ground cinnamon
1 teaspoon ground cumin
Salt and pepper
Honey, to drizzle
2 teaspoons orange zest (from 1 orange)

Instructions

Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. In a medium bowl, toss the sweet potato wedges with the olive oil, cayenne, cinnamon, cumin, some salt and pepper and a drizzle of honey. Place the sweet potatoes on the lined baking sheet and bake until browned and slightly crisp, 20 to 25 minutes. Sprinkle the zest on the wedges, and then serve.
