Soup: Italian Sausage Soup

Basil is an excellent stress reliever, and has antioxidant and anti-inflammatory benefits.
Ingredients
24 oz italian sausage (links cut up or use ground)
2 cloves garlic
2 medium onions
28 oz whole canned tomatoes, mashed
2 cans beef broth
2 medium zucchini, thinly sliced -(cut in half length wise then slice about 1/4")
1/4 tbsp basil - 1 teaspoon leaf basil
1/2 tsp leaves oregano
2 cups water - 1 to 2 cups
1 tbsp grated parmesan cheese -per serving sprinkle on top when serving..
Instructions
1. in skillet brown sausaage and drain well
2. then add all ingredients except the parmesan cheese to your Crock-Pot
3. Stir well, cover and cook on low for about 10 to 12 hours.... You may want to add more spices based on your personal prefrences...
4. also if you like you can add 1 med green pepper to this (make sure to seed and chop the pepper before adding) - My hubby likes to add some pepperoni to this soup too..
5. Makes 6 servings and is great with garlic toast...
