Drink: Minted Mai Tai

The mai tai was invented in 1944 at the original Trader Vic's restaurant in Oakland, California. There are many variations of the drink, including this mint-accented version. Look for almond syrup in the coffee-and-tea section of the supermarket.

Pineapples are loaded with vitamins and minerals including vitamin A, vitamin C, calcium, phosphorus, and potassium.

Ingredients

1/2 cup fresh lime juice
1/2 cup almond syrup
1/2 cup chopped fresh mint leaves
2 cups pineapple juice
1 1/2 cups orange juice
1 1/2 cups dark rum
Ice cubes
6 fresh mint sprigs

Instructions

Stir lime juice, syrup, and chopped mint leaves in heavy small saucepan over medium heat just until mixture simmers. Cool.
Strain syrup into pitcher. Add pineapple juice, orange juice, and rum; stir to blend. Fill 6 tall glasses with ice. Pour juice mixture over. Garnish mai tais with fresh mint sprigs.
