Soup: Sweet Corn Soup

A simple low calorie delicious sweet corn soup.

Total Time: 20 mins

Ingredients

1 tbsp cornstarch
2 medium eggs
15 oz can yellow sweet corn
5 cups water

Instructions

1. Boil can of corn (including fluids) with 5 glasses of water.

2. Mix the cornstarch and one glass of warm water.

3. Slowly pour the cornstarch mixture into the soup, stirring while it is being added. Let the soup come back to a boil. As soon as it is boiling, remove the broth from the stove.

4. Smash about half of the corn with hand blender.

5. Boil again.

6. Whisk two eggs.

7. Pour the eggs in a very slow stream. Begin stirring as soon as you start pouring.
