Lunch: Chicken-Sausage Stew

Apple cider and tomato paste form the base of this simple chicken stew, which gains flavor from smoky light kielbasa.

Ingredients

1 lb. skinless and boneless chicken thighs
1/4 tsp. salt
1/4 tsp. Pepper
4 oz. light kielbasa
4 stalk celery
.13 tsp. salt
2 c. cider
1 tbsp. tomato paste

Instructions

Coat 12-inch skillet with nonstick spray; heat on medium-high. Sprinkle chicken thighs with 1/4 teaspoon each salt and pepper.
Add to skillet along with kielbasa. Cook 5 minutes or until browned, turning. Add celery and 1/8 teaspoon salt. Cook 2 minutes, stirring.
Add cider and tomato paste. Simmer on medium 15 minutes, stirring.
