Broccoli is one of the non-starchy vegetables that has a very low glycemic index (GI), which is beneficial for reducing blood sugar levels. Broccoli is also a source of DIM (Diindolymethane). Diindolymethane is very effective in reducing the testosterone levels in the body, an action that would automatically curb male dominant features and regulate the estrogen levels in the system. Nuts are a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity. Basil is an excellent stress reliever, and has antioxidant and anti-inflammatory benefits.

Ingredients

2 cups fresh broccoli florets
2 cups fresh cauliflowerets
1 small red onion, thinly sliced
1/4 cup fat-free mayonnaise
1/4 cup fat-free ranch salad dressing
5 teaspoons shredded Parmesan cheese
1/4 teaspoon dried basil
1 cup chopped lettuce
1 can (8 ounces) sliced water chestnuts, drained
1/2 cup Caesar salad croutons

Instructions

In a large bowl, combine the broccoli, cauliflower and onion. In a small bowl, combine the mayonnaise, ranch dressing, Parmesan cheese and basil. Drizzle over vegetable mixture; toss to coat. Chill until serving.
Just before serving, add lettuce and water chestnuts; toss to coat. Sprinkle with croutons.
