Ingredients

2 average avocados
2 small heads lettuce
2 cups fresh spinach
1 medium spring onion
4 large slices bacon
3 Tbsp extra virgin olive oil
1 tbsp apple cider vinegar
1 tsp Dijon mustard OR 1 Tbsp freshly chopped parsley or other herbs
pinch of salt
freshly ground black pepper

Instructions

Fry bacon until crispy.
Tear lettuce into pieces and wash both lettuce and spinach.
Dry well using a salad spinner. Halve the avocados and remove the pits.
Cut the avocado into strips or cube. Mix the oil, vinegar, mustard, and seasonings well in a small bowl.
Assemble the salad by filling bowls with lettuce/spinach mixture and top with avocado and pieces of bacon.
Drizzle the salad with the vinaigrette.
