Health and fertility benefits of Zesty Broccolini and Garlic
Broccoli is one of the non-starchy vegetables that has a very low glycemic index (GI), which is beneficial for reducing blood sugar levels. Broccoli is also a source of DIM (Diindolymethane). Diindolymethane is very effective in reducing the testosterone levels in the body, an action that would automatically curb male dominant features and regulate the estrogen levels in the system. Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to.
Ingredients
1 Tbsp olive oil
4 garlic cloves, thinly sliced
2 lb broccolini, stems trimmed
1/4 cup low-sodium vegetable broth
Pinch crushed red pepper
Kosher salt and freshly ground black pepper to taste
1 1/2 Tbsp fresh lemon juice
2 tsp fresh lemon zest
Instructions
Heat the oil over medium-low heat. Add the garlic and sauté for about 5 to 6 minutes, or just until the garlic starts to brown. Add in the broccolini, broth, crushed red pepper, salt, and black pepper. Cover the pan, and let it steam on medium-high heat until the broccolini turns bright green and is tender, about 5 to 6 minutes.
Add in the lemon juice and zest, and serve immediately.
