Ingredients
5 sweet potatoes (about 2 pounds total), peeled and cut into 1-inch chunks
2 tablespoons honey
1 cup light mayonnaise
1 tablespoon yellow mustard
½ cup dried cranberries
½ cup chopped walnuts
¼ teaspoon salt
Instructions
Place potatoes in a large saucepan and add just enough water to cover. Bring to a boil over high heat and let boil 12 to 15 minutes, or until fork-tender; drain.
In a large bowl, combine remaining ingredients; mix well. Add sweet potatoes and toss gently until well coated. Cover and chill at least 2 hours before serving.
