Ingredients
1 tsp ground cumin
1/2 tsp cayenne pepper
1 tbsp olive oil
3 breasts, bone and skin removed chicken breast
14 1/2 oz chicken broth, low sodium
1/4 cup cilantro
1 small onion, chopped
4 oz green chilies
2 cups cannellini beans
4 oz reduced fat pepper jack cheese, shredded
Instructions
1. Cook chicken and onion in olive oil until chicken is cooked through.
2. Stir in beans, broth, chilies, cumin and cayenne pepper.
3. Bring to boil. Reduce heat to medium-low and simmer for about 15 - 20 minutes.
4. Serve topped with shredded cheese and cilantro.
