Ingredients

3 eggs, beaten
1⁄4 cup salsa
3 Tbsp. green peppers, chopped
3 Tbsp. green onions, chopped
3 Tbsp. cheddar cheese
Half avocado, sliced

Instructions

Heat pan. Spray with nonstick cooking spray. Pour beaten eggs in pan. Flip over and cook other side. While eggs are cooking, mix together the salsa, peppers, and onions. Pour the salsa mixture on one side of the eggs. Top with cheese and avocado. Fold omelette over and cook until the cheese melts.
