Lunch: Cheesy Portobello Burgers

One tbsp of honey has a glycemic index (GI) of 55.

Ingredients

2 large portobello burgers, stems and gills removed
1/4 c. olive oil
1 tsp. garlic powder
1/2 tsp. ground mustard powder
1 tbsp. Worcestershire sauce
1/2 c. shredded sharp Cheddar
2 brioche buns, toasted
honey mustard, for serving
Tomato slices, for serving
Lettuce, for serving

Instructions

Preheat oven to 375 degrees F.
In a medium bowl, whisk together olive oil, garlic powder, mustard powder and worcestershire. Dip the mushroom caps in the mixture and place the mushrooms face-down on a baking sheet. Sprinkle with salt and pepper, to taste. Bake for 10 minutes, until beginning to soften.
Flip over mushrooms and fill each cap with shredded cheddar.
Return to oven and bake for another 10 minutes, or until cheese is melted and the mushroom is tender.
Spread honey mustard on the bottom buns and place mushrooms on top. Top with tomato slices and lettuce.
