Lunch: Creamy Pesto over Pasta and Salmon

Yogurt replaces a large quantity of the olive oil and all of the cream cheese called for in the creamy versions of this traditional basil sauce.

Salmon is rich in omega-3 fatty acids and also one of the best sources of vitamin D. Keeping vitamin D levels up is important to women with PCOS. What’s more, they also lower the glycemic index of other foods that you eat in conjunction with these nuts. Any kind of nuts provide a healthy source of fat and a great way to encourage PCOS weight loss. Basil is an excellent stress reliever, and has antioxidant and anti-inflammatory benefits.

Ingredients

1 tbsp. olive oil
3 clove garlic
3/4 lb. salmon fillet
1 package bow-tie pasta
3 tbsp. chopped walnuts
2 c. fresh basil leaves
1/2 c. grated Parmesan cheese
2 tbsp. fresh lemon juice
1/2 tsp. ground black pepper
.67 c. plain low-fat yogurt
basil sprigs

Instructions

In medium-size skillet, heat oil over medium heat. Add garlic; saute until garlic starts to brown. With slotted spoon, remove sauteed garlic to food processor fitted with chopping blade and set aside.
In same skillet, saute salmon 4 to 5 minutes on each side or until just cooked through. Remove from heat; cover and keep warm.
Cook bow-tie pasta following package directions.
Meanwhile, add walnuts to garlic in food processor and process until finely chopped. Add basil, cheese, lemon juice, and pepper; process until leaves are finely chopped. Add yogurt and process pesto until smooth, stopping once to scrape side of container with rubber spatula.
Drain pasta well. Return pasta to same saucepot. Add pesto and mix well to coat evenly. Break salmon into pieces and toss into pasta. Transfer pasta to serving bowl. Garnish pasta with basil leaves, if desired. Serve immediately.
