Health and fertility benefits of Pesto Sauce
Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to. Flaxseed can be used to combat PCOS as it helps decrease androgen levels. It contains lignans that increase the production of sex hormone binding globulin (SHBG) that binds testosterone in the blood, thereby preventing it from wreaking havoc in the body. Being high in fiber, flaxseed helps slow down glucose metabolism and lower cholesterol levels. The omega-3 fatty acids in this flaxseed also reduce inflammation, lower blood pressure and reduce the risk of chronic diseases like heart disease. Apple cider vinegar will improve your body's sensitivity to insulin (Reference: http://care.diabetesjournals.org/content/27/1/281.full) Basil is an excellent stress reliever, and has antioxidant and anti-inflammatory benefits.
Ingredients
2 tbsp apple cider vinegar
2 cloves garlic
2 cups arugula
1/4 cup lemon juice
1 tbsp onion powder
1 tbsp parsley
16 oz fresh basil
1/2 tbsp mint (dried)
3 tbsps flax seed oil
Instructions
1. Place all ingredients in a food processor except for the flax seed oil and pulse until the pesto is fine and evenly chopped.
2. Turn the food processor on again and slowly add the flax seed oil until smooth. You may need more or less flax seed oil depending on the consistency.
3. Store in a jar and add to vegetables and meats as desired. (Do not heat up because of the flax seed oil.)
4. Note: works great with zucchini noodles. One serving is about 2 tablespoons.
