Health and fertility benefits of Fresh Green Bean & Tomato Salad

Romaine lettuce contains chromium, which helps maintain normal blood glucose levels by making insulin more efficient. The chromium in romaine lettuce also promotes weight loss due to its ability to help control cravings, reduce hunger, and control fat in the blood. Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to. Nuts are a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity.

Ingredients

1/2 cup mayonnaise
dash lemon juice
1 can sliced water chestnuts, drained
1/2 cup green peas, fresh or frozen
2 hard-boiled eggs, cut into quarters
2 tomatoes, seeds removed, cut into quarterst
1/2 lb fresh green beans, ends snipped off and cooked until slightly tender
1 large head romaine lettuce, or red leaf lettuce, washed and dried thoroughly
