Lunch: Roasted Asparagus with Lemon and Goat Cheese

Ingredients

Vegetable cooking spray
2 lb. asparagus
1 tbsp. olive oil
Freshly ground black pepper
1/2 c. Swanson® Vegetable Broth
3 oz. soft goat cheese
1 tbsp. lemon juice
1 tsp. grated lemon peel

Instructions

Heat the oven to 425 °F. Spray a 17 x 11-inch roasting pan or shallow baking sheet with the cooking spray.
Stir the asparagus and oil in the pan. Season with the black pepper. Pour in the broth.
Roast the asparagus for 20 minutes or until it's tender, stirring once during cooking. Top with the cheese, lemon juice and lemon peel.
