One tbsp of honey has a glycemic index (GI) of 55.

Ingredients

1 can original or "lite" coconut milk
5 tbsp. Unsweetened cocoa powder
2 tbsp. raw honey
1 tsp. pure vanilla extract
1/4 tsp. salt

Instructions

Blend all the ingredients until smooth and pour the mixture into ice pop molds. Insert the base and freeze for at least 2 hours, or until set. Loosen by running the molds under warm water.
