Dinner: Lemon Pepper Tuna Salad

Tuna is great for a high protein diet as it has 33 grams of protein within its housing, with no pesky carbohydrates to worry about. In addition to this, tuna contains B vitamins and vitamin D, both of which are vital to fighting back against PCOS. Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to. Basil is an excellent stress reliever, and has antioxidant and anti-inflammatory benefits.

Ingredients

1 tbsp parmesan cheese
1 tsp leaves fresh or dried basil
1 tbsp pepper
1 tsp salt
1 tbsp olive oil
1 wedge yields lemon juice
1 cup shredded lettuce
1 cup chopped or sliced tomato
1 can tuna

Instructions

1. Heat oil or cooking spray in a pan.

2. Add the tuna, and spices.

3. Fry until warm and good tasting. Mix the remaining salad ingredients together well in a bowl.

4. Put tuna and spices over salad, preferably directly from the pan, it will slightly wilt the lettuce and melt the cheese making it spectacular.

5. Note: tuna can be prepared ahead of time and refrigerated and you can add any other vegetables permitted. Great for Phase 1 of South Beach Diet.
