Lunch: Fruit Salad with Honey Dressing

Poppy seeds are packed with calcium, magnesium, B vitamins, and zinc. Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to. One tbsp of honey has a glycemic index (GI) of 55. Nuts are a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity. Walnuts are low on the glycemic index. What’s more, they also lower the glycemic index of other foods that you eat in conjunction with these nuts. Any kind of nuts provide a healthy source of fat and a great way to encourage PCOS weight loss.

Ingredients

1 avocado, peeled and sliced
1 banana, sliced
1 apple, cored and diced
1/4 teaspoon mustard
1/4 teaspoon salt
1 1/2 teaspoons poppy seeds
1/2 teaspoon fresh lemon juice, plus the juice of one lemon
1/4 cup canola oil
1/4 cup orange juice
1/3 cup honey
1 (11 oz) can mandarin oranges, drained
1/4 cup raisins
1/4 cup chopped walnuts, or pecans

Instructions

For the dressing, combine the honey, orange juice, oil, 1/2 teaspoon lemon juice, poppy seeds, salt, and mustard in a jar with a tight lid; cover and shake well. Toss the apple, banana, and avocado with juice from 1 lemon to prevent the fruit from turning brown. Combine the fruit, raisins, and nuts in a glass bowl. Add the dressing and stir gently. Serve on red leaf lettuce.
