Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

4 cardamom pods, bruised until cracked open
1 stick cinnamon, broken in half
1 stalk lemongrass, bruised
Small handful fresh mint
1/4 cup honey
Chopped stone fruit ( apricots, peaches or plums), for serving

Instructions

Combine the cardamom, cinnamon, lemongrass, mint and honey in a teapot or small saucepan. Add 2 cups of just-boiled water and let steep for 4 to 5 minutes. Strain and leave to cool.
Serve over ice and garnish with chopped stone fruit.
