Fresh spinach is an excellent source of vitamin K, vitamin A, vitamin C, and vitamin B6, all of which have significant roles in reducing inflammation in the body, all of which help in the case of infertility.
Ingredients
1 (9-oz.) pkg. frozen chopped spinach, thawed, squeezed to drain, chopped
1 (8-oz.) pkg. light cream cheese (Neufchatel), softened (not tub variety)
1/2 cup shredded carrots
1/2 cup sour cream
1/8 teaspoon onion powder
1/2 teaspoon dried dill weed
1 (2-oz.) jar sliced pimientos, drained
Instructions
In 1-quart microwave-safe casserole, combine all ingredients; mix well. Cover with microwave-safe waxed paper or plastic wrap.
Microwave on HIGH for 3 to 5 minutes or until hot, stirring twice during cooking. Serve immediately with crackers and fresh vegetable dippers.
